One Pot Chicken Fajita Pasta

Ingredients 1/4 Cup Vegetable Oil 2# Boneless Skinless Chicken Thighs 1 Red Bell Pepper 1 Green Bell Pepper 1 Yellow Bell Pepper 1 Yellow Or White Onion 1 tsp Salt 1 tsp Black Pepper 1 TBL Ancho Chili Powder 1 TBL Ground Cumin 1 TBL Garlic Powder 3 Cups Milk 2 Cups Chicken Stock 1# Penne, Ziti or Elbow Macaroni 1 Cup Shredded Pepper Jack Cheese Heat oil in a large pot over high heat Add chicken and cook for 10-12 minutes stirring occasionally, remove  Add onion and bell pepper and cook for 5-7 minutes  Add chicken back to pot with all the seasoning and stir until well coated  Add milk, stock, and penne and bring to boil, stir to prevent sticking   reduce heat and cook for 20 mins  Stir in pepper jack cheese 

Basic Muffin Recipe

3 cups All-Purpose Flour 1 cup Sugar 1 TBL Baking Powder 1/2 tsp Baking Soda 1/2 tsp Salt 1 1/2 cup Plain Yogurt 2 Eggs 1 Stick Butter, melted and cooled •Heat oven to 375*F •Combine dry ingredients in a bowl •Combine wet ingredients in separate bowl •Fold wet into dry •Place into greased muffin pan •Bake 25-30 mins or until toothpick comes out clean This is a basic base you can fold whatever you like into batter like Blueberries, etc

Perfect Cornbread Everytime

1 cup All-Purpose Flour 1 cup Corn Meal 4 tsp Baking Powder 1/2 tsp Salt 1/4 cup Sugar or Honey 1 Large Egg 1 cup Milk 1/2 Stick Butter melted and cooled 1/2 Stick Butter as is •Preheat oven to 425*F •While oven is heating place cast iron skillet on stove on med heat and melt the 1/2 stick of solid butter •Mix all other ingredients (dry first then wet including 1/2 stick melted butter) •Once skillet is hot and butter is melted (not brown) add mixture to skillet and place in oven •Cook for 20-22 mins or until done

Christmas Cranberry Pudding

  2- 3 oz boxes of raspberry jello dissolved in 1 1/2 cup boiling water . Add l large can of crushed pineapple, 1 can whole cranberry sauce , 1 cup chopped pecans, and 1/2 cup of sugar.  Let jello congeal Mix together and 8 oz package of cream cheese, 1/2 cup sour cream , 1/2 cup sugar.  Spread this mixture on top of congealed jello.  Sprinkle top with chopped pecans. 

Date Cookies

Granna made these every Christmas 1 cup     butter 1/2 cup  sugar 2 cups   Dates, cut up 2            Eggs, beaten 1 cup     chopped nuts 1 tsp      vanilla 4 cups   rice crispies sheredded coconut   Melt butter in a sauce pan.  Add sugar and dates.  Cook over low heat until it boils.  Add eggs and boil 2 minutes more.  Take off heat and add chopped nuts, vanilla, and  rice krispies .  When cool, roll into balls and then roll into shredded coconut.  Makes about 60.

Granna's Fruit Salad

Uncle Bruce says, "Mom got this recipe from Mrs. Titlow, the mother of a friend of mine when I was in 9th grade. She made this every Thanksgiving for years"   2 large containers of Cool Whip . 1 large can of slice peaches cut into smaller pieces (save 1/2 cup of the peach juice) 2 cans mandarin oranges 1 large can pineapple tidbits 2 cups miniature marsh mellows 1 - 8 oz. package cream cheese 2 - 5 oz. jars of pimento spread   Beat together cheese, pimento spread, and peach juice. Fold in fruit and marsh mellows Fold in cool whip.  Keep refrigerated. 

Glorified Cabbage

A favorite from when Thanksgiving was at Granna's house.   1 head cabbage 3/4 stick of oleo (Wisconsin speak for butter) 1 can cream of mushroom soup 1 onion chopped fine 1/2 lb Velveeta cheese 1 cup seasoned bread crumbs salt and pepper to taste   Shred cabbage and boil until very tender, then drain. Saute onion in oleo, add cheese.  Allow to melt over low heat. Blend in soup with cheese mixture. then add boiled cabbage.  Add bread crumbs (saving 1/4 of crumbs to sprinkle on top) Bake in 2 qt. cassarole at 350 degs. uncovered for 20-30 minutes.
