One Pot Chicken Fajita Pasta

Ingredients

1/4 Cup Vegetable Oil

2# Boneless Skinless Chicken Thighs

1 Red Bell Pepper

1 Green Bell Pepper

1 Yellow Bell Pepper

1 Yellow Or White Onion

1 tsp Salt

1 tsp Black Pepper

1 TBL Ancho Chili Powder

1 TBL Ground Cumin

1 TBL Garlic Powder

3 Cups Milk

2 Cups Chicken Stock

1# Penne, Ziti or Elbow Macaroni

1 Cup Shredded Pepper Jack Cheese

  • Heat oil in a large pot over high heat
  • Add chicken and cook for 10-12 minutes stirring occasionally, remove 
  • Add onion and bell pepper and cook for 5-7 minutes 
  • Add chicken back to pot with all the seasoning and stir until well coated 
  • Add milk, stock, and penne and bring to boil, stir to prevent sticking  
  • reduce heat and cook for 20 mins 
  • Stir in pepper jack cheese
