Maw-Maw's Smothered Corn

A classic that makes its way to every occasion.

4 cans   White Shoepeg Corn
1           Yellow Onion
Salt and Pepper to Taste

Completely drain the corn of all its liquid, reserving the liquid. Saute onions and corn until it begins to stick to the cast iron pot and caramelize.  And liquid back to the corn, salt, pepper, and simmer covered for about 1 hour.
