Red Rice

This is the simplest of the Jambalaya recipes that I make.  What follows is the recipe that mom tought me when I was too little to see into the magnalite pot.

2                        Med yellow onions
1#                      smoked sausage
2                        small 8oz cans of Tomato sauce
2 2/3 cups          Long grain rice
4 cups                Water or Chicken broth

Heat pot and add onions and sausage.  Fry down until the onions begin to brown, add the tomato sauce and water/broth (cleaning out the sauce cans with the liquid), salt pepper and hot sauce to taste.  Bring to a rolling boil and add rice.  Return to a boil and cover tightly reduce heat to low and leave alone for 25-30 minutes cooking until all the water is absorbed and the rice is cooked.  You may add water after the first 30 minutes if necessary.

That is the simplest form of that recipe and is very good.  Over the years I have added several other things to it to kick it up.  (ie. celery, bellpepper, garlic, or whatever you may have aroud in the fridge that needs to be used up  I almost always add green onions at the end)  After all it is a Jambalaya.
