Easy Spanish Rice

1 can        Rotel Original
1 small      yellow onion
2 cloves    garlic
1 1/2 cup   long grain rice
2 Tbl        oil (canola preferably)
2 Cups      water or chicken broth
2 tsp         Southwest rub

In skillet heat oil on high heat and add rice sautee until rice begins to brown.  Add onions and sautee until onions begin to become translucent.  Add garlic and saute until fragrant.  Pour in Rotel and water/broth, bring to a rolling boil.  Cover, and reduce heat to low and allow to cook for 20-25 minutes or until rice is cooked and liquid is absorbed.
